Acidic protease is an enzyme that catalyzes protein hydrolysis. It can widely cut off protein molecules from the inside and decompose into small peptides. It can preferentially cut the peptide bonds with aromatic or hydrophobic amino acid residues at both ends, and the products are small peptides and amino acids.
