α-amylase can hydrolyze the magnitude 1,4 glucoside bonds in starch molecules, arbitrarily cut off the growth of short chain dextrin and small amount of low molecular sugars, and the amylose and branched starch are decomposed in an irregular form, which is widely used in the production of feed, beer, monosodium glutamate and other industries.
